This wine was released last year. Due to tinkering with release dates, we are now carrying over the 06 until Nov 08. Therefore the first release is still going to be current for another 12 months. However, a year on and you will hopefully understand why we are holding onto the Cab for another year. This wine has further settled and shows no sign of development, just some settling down. It still remains a pure, honest expression of Cabernet from the valley. By sourcing fruit from the warmer north facing slopes, this fine elegant expression is a serious reflection of Yarra Cabernets of yester year. This wine will stand the test of time even though it is already approachable and complex. Decant 1 hour prior to serving.
- Vibrant med red/purple. No sign of age.
- Intensely perfumed and pure red fruits ranging from early ripeness to later ripeness. Raspberries and blackberries dominate with herbs and spice.
- Palate is tight and elegant. Long and fine with underlying power. A wine we are enjoying more everyday.
489 cases of the 2005 Hugh Cabernet were produced.

2007 November Launch
The 2007 launch saw Mac travel up the east coast. The new wines were showcased in Melbourne, Sydney and Brisbane and those that were lucky enough to make it to one of the dinners in each city were spoilt with not only his new wines but also a selected number of wines from overseas including some wonderful Champagne, Italian reds and ports.
