Made from Cabernet this year due to the frost restrictions with Pinot, this fruit had 24 hours skin contact prior to a combination of new and old oak fermentation followed by 6 months of old oak maturation. The fruit for this wine was picked earlier than most Rose’s to allow for finesse and life. A dry and savoury style of rose.
- Pale red with watermelon and fresh strawberry hues (almost fluorescent).
- Fresh strawberries, slight herbal notes and freshly squeezed watermelon. Almost mineralic.
- Following along the lines of the nose, the palate reveals red perfumed fruits with almost unripe strawberries adding to the freshness. Fine and enjoyable.
76 cases of the 2007 Rose were produced.

2007 November Launch
The 2007 launch saw Mac travel up the east coast. The new wines were showcased in Melbourne, Sydney and Brisbane and those that were lucky enough to make it to one of the dinners in each city were spoilt with not only his new wines but also a selected number of wines from overseas including some wonderful Champagne, Italian reds and ports.
