This Riesling follows in the footsteps of the much enjoyed 2005 and 2006 RS16 (actually RS54). Coming from the wonderful and underrated Strathbogie Ranges, this wine is unashamedly inspired by the world’s best Riesling areas in Germany. This wine challenges perceptions of Australian Riesling playing high natural acid up against the natural sugar that remains by stopping fermentation early. Partially fermented in old wood and blended with a component that was fermented in tank at 9°C (wild yeast), this is a wine we had a lot of fun making and believe it will provide as much pleasure in the glass.
- Pale straw.
- Aromatic, perfume and citrus (lemon) with almost a perfume of red fruits.
- Palate is fine and expressive with great length and perseverance. Fine line through mid palate with good freshness. Peripheral notes give depth and breadth and a finish of orange and grapefruit rind.
131 cases of the 2007 RS31 were produced.

2007 November Launch
The 2007 launch saw Mac travel up the east coast. The new wines were showcased in Melbourne, Sydney and Brisbane and those that were lucky enough to make it to one of the dinners in each city were spoilt with not only his new wines but also a selected number of wines from overseas including some wonderful Champagne, Italian reds and ports.
